Banyuls

Banyuls lies in the Southern France region of Languedoc-Roussillon and is home to one of France's finest naturally sweet wines. Grenache must make up at least 50% of the blend for normal Banyuls wines while 75% of the blend in Banyuls Grand Cru must be Grenache. The grapes yield poorly and are often part shrivelled before being picked in early October. Alcohol is added while the must is still on the skins so that a wide range of flavor compounds are absorbed into the young wine. A Banyuls Grand Cru must be matured in wood for at least 30 months.
